Ingredients

  • 2 cups minute rice
  • 6 to 8 boneless chicken breasts
  • 2 (10 3/4 oz) cans mushroom soup
  • 1/4 cup butter
  • 1/2 cup milk
  • 1/2 cup dry sherry
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup toasted slivered almonds

Instructions

  1. Preheat oven to 350°F.
  2. Grease a large shallow baking dish.
  3. Spread half of the cooked minute rice on the bottom of the dish.
  4. Sprinkle the chicken breasts with salt and pepper, then place them over the rice.
  5. Mix together mushroom soup, butter, milk, and sherry.
  6. Pour half of the soup mixture over the chicken.
  7. Sprinkle the remaining rice over the chicken.
  8. Pour the rest of the soup mixture over the rice and chicken.
  9. Sprinkle grated Parmesan cheese and toasted slivered almonds on top.
  10. Cover tightly with foil and bake for 1 hour and 15 minutes.
