Ingredients

  • 1 fryer-broiler chicken (3 to 3 1/2 lb.)
  • 1 medium size onion
  • 2 Tbsp. fat
  • flour
  • 2 Tbsp. vinegar
  • 2 Tbsp. brown sugar
  • 1 c. tomato catsup
  • 3 Tbsp. Worcestershire sauce
  • 1/2 tsp. prepared mustard
  • 1 c. hot water
  • 1/2 c. chopped celery
  • salt
  • dash of red pepper

Instructions

  1. Cut the chicken into serving pieces; dip in flour and brown in hot fat in a skillet.
  2. When the chicken pieces are browned, remove them to a casserole.
  3. Add chopped onion to the fat in the skillet and brown lightly.
  4. Add vinegar, brown sugar, tomato catsup, Worcestershire sauce, prepared mustard, hot water, chopped celery, salt, and red pepper to the skillet and simmer for 30 minutes.
  5. Pour the sauce over the browned chicken in the casserole.
  6. Cover the casserole with aluminum foil and bake in a moderate oven at 350°F for 1 hour.
  7. Serve piping hot with hot rolls, potato salad, and sliced tomatoes if desired.
