Valencian Orange Cake

Ingredients

  • 1/2 cup hot water
  • 2 cups sugar
  • 1/2 cup butter
  • 1 teaspoon baking soda
  • 1 small package dates
  • 2 beaten eggs
  • 2 cups flour
  • 1/2 cup milk
  • 1 cup chopped almonds or walnuts
  • 1 orange (rind and juice)
  • Pinch of salt

Instructions

  1. Pour hot water and baking soda over the chopped dates and allow to sit.
  2. Cream together butter and sugar until light and fluffy.
  3. Add beaten eggs, orange rind, and orange juice to the creamed mixture and mix well.
  4. Stir in the flour, salt, milk, and chopped nuts until combined.
  5. Pour batter into a greased baking pan.
  6. Bake in a preheated oven at 350°F (175°C) for about 30-40 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before serving.
