Ingredients

  • 2 lb. lean veal stewing meat
  • 1 tsp. salt
  • 3 Tbsp. flour
  • 1/8 tsp. garlic powder
  • 2 Tbsp. finely chopped onion
  • 1 cup chicken broth
  • 1/2 cup California Sauterne or other white wine
  • 1/2 to 1 cup sour cream
  • 1 tsp. paprika
  • 1/8 tsp. rosemary powder
  • 4 Tbsp. oil

Instructions

  1. Trim away any fat from the veal and cut into medium-sized chunks.
  2. Combine paprika, salt, rosemary, and flour; dredge the veal thoroughly in this mixture.
  3. Heat oil in a heavy skillet or Dutch oven over moderate heat.
  4. Brown the veal on both sides until nicely colored.
  5. Add the garlic, chopped onion, chicken broth, and white wine to the skillet.
  6. Cover tightly and simmer until the veal is tender, about 1 1/2 hours.
  7. Just before serving, stir in sour cream to taste, mixing well.
