Ingredients

  • 1 fryer chicken
  • 14 cups water
  • 2 chicken bouillon cubes
  • 1 pound carrots, sliced
  • 1 stalk celery, sliced
  • 2 onions, sliced
  • 1 1/2 cups thin noodles
  • 16 oz jar salsa
  • 1 pound Velveeta cheese
  • 1 stewed hen (for broth)
  • 3 hard-cooked eggs, chopped
  • 1 can asparagus tips
  • 1 can sliced mushrooms (optional), drained

Instructions

  1. Remove the stewed hen from broth, cool, and shred the white meat; reserve the dark meat for another use.
  2. Strain the broth and set aside.
  3. Just before serving, add eggs, asparagus tips, sliced mushrooms, and pimentos to the heated broth.
  4. Add the shredded white chicken meat to the broth, which has been slightly thickened with cornstarch.
  5. Cook until the mixture clears, being careful not to boil too much after adding the cornstarch.
  6. Serve the soup hot, enjoying the flavorful broth with added vegetables and chicken.
