Ingredients

  • 2 1/4 cups rice
  • 1 onion, sliced
  • 1 carrot, sliced
  • 6 cloves, powdered
  • 3 small cinnamon pieces
  • 1 1/4 cups peas
  • 1 potato
  • 1 bunch coriander leaves
  • 2 teaspoons flour
  • 2 teaspoons salt
  • 6 cups water
  • 2 bay leaves
  • 1 1/2 teaspoons chili powder
  • 2 ground cardamom pods
  • 2 teaspoons cumin seed
  • 1/8 cup Ricotta cheese
  • 2 green chiles
  • 1/2 tablespoon ginger paste

Instructions

  1. Wash and soak the rice for 10 minutes.
  2. Deep fry the Ricotta cheese in butter and keep aside.
  3. Fry the onion and bay leaves in butter until brown.
  4. Add chili powder, salt, cloves, cardamom, cinnamon, cumin seed, water and bring to a boil.
  5. Add carrot slices, rice, peas, and fried Ricotta cheese; cook until the rice has absorbed all the water and each grain is separate.
  6. Fry the potatoes and add them to the dish, then cover the vessel.
  7. At the end, add the coriander leaves to garnish.
