Ingredients

  • 2 Tbsp. butter
  • 2 c. sliced zucchini
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 tsp. dried basil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. white wine or chicken broth
  • 1 c. chicken broth
  • 3/4 c. couscous
  • 1 c. cherry tomatoes
  • 1/4 c. pitted black olives, cut in half
  • 1 Tbsp. chopped fresh flat leaf parsley

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add chopped onion, sliced zucchini, salt, pepper, minced garlic, and dried basil; cook until zucchini is tender, about 4 to 5 minutes.
  3. Pour in white wine or chicken broth; bring to a boil.
  4. Cook for 1 minute.
  5. Add chicken broth; bring to a boil.
  6. Stir in couscous, pitted black olives, and cherry tomatoes.
  7. Remove from heat; cover and let stand until liquid is absorbed, about 5 minutes.
  8. Fluff with a fork before serving, then sprinkle with chopped fresh parsley.
