Ingredients

  • 1 cauliflower, cut up
  • 6 tomatoes, peeled and chopped
  • 6 to 8 small potatoes, cut up
  • 1/4 lb. shelled peas
  • 1/4 lb. green beans, sliced
  • 1 Tbsp. turmeric
  • 1 1/2 Tbsp. curry powder
  • 1/2 tsp. salt
  • 1/4 cup butter
  • 6 small onions
  • 1 clove garlic, crushed
  • 1 1/2 cups stock

Instructions

  1. Place the cauliflower, tomatoes, potatoes, peas, green beans, small onions, and garlic on a large plate.
  2. Sprinkle the vegetables with turmeric, curry powder, and salt.
  3. Melt butter in a heavy pan over medium heat.
  4. Saute the onions and garlic until fragrant and translucent.
  5. Add the spiced vegetables and stock to the pan.
  6. Cover and bring to a boil, then reduce heat and simmer for about 20 minutes until all vegetables are tender.
  7. Serve hot with cooked rice.
