A hearty vegetable lasagne layered with spinach, mushrooms, carrots, and a rich cottage cheese filling, perfect for family dinners and vegetarian gatherings.

- Cook lasagne according to package directions for 10 minutes; drain.
- Lay the cooked lasagne flat on wax paper or foil to prevent sticking as they cool.
- Saute mushrooms, carrots, onion, and garlic in vegetable oil in a 5-quart saucepan until the onion is tender but not browned.
- Add spinach and cook for 2 to 3 minutes, stirring constantly.
- Combine cottage cheese and eggs; add to the spinach mixture and mix well.
- Pour a thin layer of spaghetti sauce in a 9 x 13-inch pan. Arrange a layer of lasagne over the sauce.
- Spread half of the spinach mixture over the lasagne; sprinkle with 1 tablespoon of Parmesan cheese.
- Repeat the layers with remaining lasagne, spinach mixture, and another tablespoon of Parmesan.
- Top with the remaining lasagne and sauce.
- Sprinkle with the remaining 2 tablespoons of Parmesan cheese.
- Cover with foil and bake at 375°F for 25 minutes or until hot and bubbly.
- Uncover and bake for 5 minutes longer.
- Let stand for 10 minutes before cutting to allow easier serving.
