A hearty vegetable lasagne layered with spinach, mushrooms, carrots, and a rich cottage cheese filling, perfect for family dinners and vegetarian gatherings.

Ingredients

  • 8 oz. lasagne
  • 8 oz. fresh mushrooms, sliced
  • 2 c. grated carrots
  • 1 c. onion, finely chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. vegetable oil
  • 10 oz. pkg. fresh spinach, torn into small pieces
  • 2 c. cottage cheese
  • 2 eggs
  • 1 3/4 c. spaghetti sauce

Instructions

  1. Cook lasagne according to package directions for 10 minutes; drain.
  2. Lay the cooked lasagne flat on wax paper or foil to prevent sticking as they cool.
  3. Saute mushrooms, carrots, onion, and garlic in vegetable oil in a 5-quart saucepan until the onion is tender but not browned.
  4. Add spinach and cook for 2 to 3 minutes, stirring constantly.
  5. Combine cottage cheese and eggs; add to the spinach mixture and mix well.
  6. Pour a thin layer of spaghetti sauce in a 9 x 13-inch pan. Arrange a layer of lasagne over the sauce.
  7. Spread half of the spinach mixture over the lasagne; sprinkle with 1 tablespoon of Parmesan cheese.
  8. Repeat the layers with remaining lasagne, spinach mixture, and another tablespoon of Parmesan.
  9. Top with the remaining lasagne and sauce.
  10. Sprinkle with the remaining 2 tablespoons of Parmesan cheese.
  11. Cover with foil and bake at 375°F for 25 minutes or until hot and bubbly.
  12. Uncover and bake for 5 minutes longer.
  13. Let stand for 10 minutes before cutting to allow easier serving.
