Ingredients
- 1 eggplant peeled ⓘ
- 1 cucumber sliced or chopped ⓘ
- 1 yellow onion sliced or chopped ⓘ
- 1 green pepper sliced or chopped ⓘ
- 3 celery sticks sliced or chopped ⓘ
- 3 to 4 tomatoes sliced or chopped ⓘ
- 5 to 6 mushrooms sliced or chopped ⓘ
- garlic powder to taste ⓘ
- 1 (32 oz.) jar spaghetti sauce ⓘ
- 3 cups shredded Mozzarella cheese ⓘ
Instructions
- Add all vegetables in a large casserole dish.
- Add garlic powder and spaghetti sauce, then mix thoroughly.
- Sprinkle shredded mozzarella cheese on top.
- Bake in an oven at 350°F (175°C) for 45 minutes or until the cheese is melted and bubbling.
