Ingredients

  • 1 eggplant peeled
  • 1 cucumber sliced or chopped
  • 1 yellow onion sliced or chopped
  • 1 green pepper sliced or chopped
  • 3 celery sticks sliced or chopped
  • 3 to 4 tomatoes sliced or chopped
  • 5 to 6 mushrooms sliced or chopped
  • garlic powder to taste
  • 1 (32 oz.) jar spaghetti sauce
  • 3 cups shredded Mozzarella cheese

Instructions

  1. Add all vegetables in a large casserole dish.
  2. Add garlic powder and spaghetti sauce, then mix thoroughly.
  3. Sprinkle shredded mozzarella cheese on top.
  4. Bake in an oven at 350°F (175°C) for 45 minutes or until the cheese is melted and bubbling.
