Ingredients

Instructions

  1. Place bread cubes in the bottom of a greased 8 x 8 x 2-inch baking pan; set aside.
  2. Sauté chopped onion, julienne carrots, minced garlic, and chopped zucchini until tender.
  3. Layer sliced tomato and sautéed vegetables over the bread cubes.
  4. In a bowl, whisk together milk, egg beaters, and seasonings.
  5. Pour the egg mixture evenly over the layered vegetables and bread.
  6. Sprinkle shredded mozzarella cheese and chopped basil on top.
  7. Dot with margarine.
  8. Bake in a preheated oven at 375°F (190°C) for about 45 minutes until golden and set.
