Ingredients

  • 2 Tbsp. butter
  • 2 cloves garlic, crushed
  • 2 tsp. chopped chives
  • 1/4 tsp. pepper
  • 3 (10 oz.) packages frozen Brussels sprouts
  • 2 (10 oz.) packages frozen whole kernel corn
  • 3 tomatoes, cut in wedges
  • 1/2 cup chicken stock

Instructions

  1. Melt butter in a large skillet.
  2. Add crushed garlic, chopped chives, and pepper.
  3. Cook for 5 minutes.
  4. Arrange 2 1/2 packages of frozen Brussels sprouts in a circle in the skillet, beginning at the outer edge.
  5. Add frozen corn within the circle of Brussels sprouts.
  6. Place tomato wedges in the next circle and add remaining Brussels sprouts in the center of the tomatoes.
  7. Pour chicken stock over the vegetables.
  8. Cover and cook over low heat for 25 minutes or until tender.
