Cheddar-Chicken Soup

Ingredients
- 2 Tbsp. margarine ⓘ
- 1/2 c. chopped onion ⓘ
- 1/2 c. chopped celery ⓘ
- 1/2 c. chopped carrot ⓘ
- 2 tsp. all purpose flour
- 1 c. water ⓘ
- 1 pkg. instant chicken broth and seasoning mix ⓘ
- 1/2 c. frozen asparagus cuts and tips ⓘ
- 1/2 c. skim milk ⓘ
- 2 oz. Cheddar cheese, shredded ⓘ
- 4 oz. cooked chicken, diced ⓘ
- 1 c. cooked small macaroni ⓘ
- 1 tsp. Worcestershire sauce ⓘ
- dashes of salt and white pepper ⓘ
Instructions
- In a 1 1/2 to 2-quart saucepan, heat margarine over medium heat until bubbly and hot; add chopped onion, celery, and carrot, and sauté until vegetables are tender.
- Sprinkle the vegetables with flour and stir quickly to combine; gradually stir in water.
- Add the instant chicken broth and seasoning mix, stirring constantly, and bring to a boil.
- Add frozen asparagus cuts and tips, and cook, stirring, for about 3 minutes.
- Stir in skim milk and shredded Cheddar cheese, and continue cooking until the cheese melts.
- Reduce heat to low, add diced cooked chicken and cooked macaroni, and cook until thoroughly heated.
