Vegetarian Quiche

A delicious vegetarian quiche with a flaky homemade crust, filled with Swiss and Cheddar cheeses, fresh carrots, green onions, and a creamy egg custard. Perfect for brunch or lunch.

Ingredients

  • 1 1/2 cups flour
  • 1/4 teaspoon salt
  • 1/3 cup shortening
  • 3 to 4 tablespoons cold water
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup shredded carrot
  • 1/3 cup green onions
  • 1 tablespoon flour
  • 4 beaten eggs
  • 1 1/3 cups milk
  • 1/4 teaspoon salt

Instructions

  1. In a bowl, combine flour and salt.
  2. Cut in shortening until pieces are the size of small peas.
  3. Sprinkle 1 tablespoon water over part of mixture; toss with a fork.
  4. Push to side of the bowl. Repeat until all is moistened.
  5. Form into a ball.
  6. On a lightly floured surface, roll dough from center to edge, forming a 12-inch circle.
  7. Fit the dough into a 9-inch pie plate.
  8. Trim the pastry to 1/2-inch beyond the edge of the pie plate.
  9. Do not prick the pastry.
