Vegetarian Quiche
A delicious vegetarian quiche with a flaky homemade crust, filled with Swiss and Cheddar cheeses, fresh carrots, green onions, and a creamy egg custard. Perfect for brunch or lunch.

Instructions
- In a bowl, combine flour and salt.
- Cut in shortening until pieces are the size of small peas.
- Sprinkle 1 tablespoon water over part of mixture; toss with a fork.
- Push to side of the bowl. Repeat until all is moistened.
- Form into a ball.
- On a lightly floured surface, roll dough from center to edge, forming a 12-inch circle.
- Fit the dough into a 9-inch pie plate.
- Trim the pastry to 1/2-inch beyond the edge of the pie plate.
- Do not prick the pastry.
