Ingredients

  • 3 to 3 1/2 pounds venison chuck roast
  • 2 bay leaves
  • 12 juniper berries
  • 2 tsp salt
  • 1 cup boiling water
  • 12 gingersnap cookies
  • about 3/4 cup crushed gingersnap cookies
  • 2 onions sliced
  • 12 peppercorns
  • 6 whole cloves
  • 1 1/2 cups red wine vinegar
  • 2 tsp sugar

Instructions

  1. Place venison in an earthenware bowl or glass baking dish with onions, bay leaves, peppercorns, cloves, juniper berries, salt, vinegar, and boiling water.
  2. Cover tightly and refrigerate for at least 3 days, turning the meat twice a day.
  3. Never pierce the meat when turning.
  4. Drain the meat, reserving the marinade.
  5. In a heavy skillet, brown the meat on all sides in shortening.
  6. Add the marinade mixture, cover tightly, and simmer for 3 to 3½ hours or until the meat is tender.
  7. Remove the meat and onions from the skillet and keep warm.
  8. Strain the liquid in the skillet and measure; add water if needed to make 2½ cups.
  9. Pour the liquid into the skillet, cover, and simmer for 10 minutes.
  10. Stir gingersnap cookies and sugar into the liquid, cover, and simmer gently for 3 minutes.
  11. Serve the meat and onions on a platter.
  12. Accompany with gingersnap gravy.
