- Place venison in an earthenware bowl or glass baking dish with onions, bay leaves, peppercorns, cloves, juniper berries, salt, vinegar, and boiling water.
- Cover tightly and refrigerate for at least 3 days, turning the meat twice a day.
- Never pierce the meat when turning.
- Drain the meat, reserving the marinade.
- In a heavy skillet, brown the meat on all sides in shortening.
- Add the marinade mixture, cover tightly, and simmer for 3 to 3½ hours or until the meat is tender.
- Remove the meat and onions from the skillet and keep warm.
- Strain the liquid in the skillet and measure; add water if needed to make 2½ cups.
- Pour the liquid into the skillet, cover, and simmer for 10 minutes.
- Stir gingersnap cookies and sugar into the liquid, cover, and simmer gently for 3 minutes.
- Serve the meat and onions on a platter.
- Accompany with gingersnap gravy.
