Ingredients

  • 4 eggs
  • 1 1/2 cups oil
  • 2 cups sugar
  • 2 1/2 cups self-rising flour
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped
  • 1 cup coconut
  • 1 cup crushed pineapple, undrained

Instructions

  1. Mix eggs, oil, and sugar well.
  2. Add chopped pecans, coconut, crushed pineapple, self-rising flour, and vanilla; mix until combined.
  3. Pour batter into a tube pan and bake at 325°F for 1 hour on the lower rack in the oven.
  4. Remove from oven and punch holes in the top of the cake.
  5. Pour the glaze over the hot cake.
  6. Leave in the pan overnight before serving.
