Vickie'S Chili

Ingredients
- 1 Tbsp. cooking oil
- 3 medium onions, finely chopped ⓘ
- 2 green bell peppers, cored, seeded and finely chopped ⓘ
- 2 stalks celery, finely chopped ⓘ
- 1 Tbsp. garlic powder ⓘ
- 3 lb. ground beef ⓘ
- 2 (14 1/2 oz.) cans tomatoes, chopped ⓘ
- 2 (14 1/2 oz.) cans tomato sauce
- 1 (6 oz.) can tomato paste
- 5 c. water ⓘ
- 1/2 c. chunky salsa ⓘ
- 1 jalapeno pepper, finely chopped ⓘ
- 6 Tbsp. chili powder ⓘ
- 1 Tbsp. ground cumin ⓘ
- 1 tsp. oregano ⓘ
- 3 tsp. salt ⓘ
Instructions
- Heat oil in a heavy 10-quart pot over medium heat.
- Add chopped onions, green bell peppers, celery, and garlic powder.
- Cook, stirring until onions are translucent.
- Add ground beef a little at a time, stirring occasionally.
- Cook, stirring occasionally, until the meat is evenly browned.
- Stir in chopped tomatoes, tomato sauce, tomato paste, water, chunky salsa, chopped jalapeno, chili powder, ground cumin, oregano, and salt.
- Bring to a boil, then lower heat and simmer, uncovered, for 2 1/2 to 3 hours, stirring often.
- Taste and adjust seasonings as needed.
