Ingredients

  • 1 egg yolk
  • 2 Tbsp cold water
  • dash of salt
  • juice of 1/2 lemon
  • 1/2 cup butter
  • 1 cup sifted flour
  • 1 tsp baking powder
  • 3 large apples
  • 1/4 cup raisins
  • 1/3 cup almonds
  • 1 egg beaten
  • 1 tsp lemon extract

Instructions

  1. Beat together egg yolk, cold water, salt, and lemon juice.
  2. Cream the butter.
  3. Blend the egg yolk mixture into the butter.
  4. Add sifted flour and baking powder to form a dough.
  5. Divide the dough in half.
  6. Roll one piece out thin and fit into a greased 12 x 6-inch pan.
  7. Peel, core, and chop apples finely with raisins and almonds.
  8. Spread the apple mixture over the dough in the pan.
  9. Roll out the remaining dough thin and place over the apple filling.
  10. Brush the top with beaten egg.
  11. Bake in a hot oven at 400°F (200°C) for 45 minutes.
