Instructions

  1. In a 4-quart Dutch oven, cook onion, celery, and garlic in hot margarine until tender.
  2. Add water, undrained tomatoes, lentils, barley, bouillon cubes, rosemary, and pepper.
  3. Bring to boiling, reduce heat, cover, and simmer for 45 minutes.
  4. Add sliced carrots and simmer for an additional 15 minutes, or until carrots are tender.
  5. Ladle into soup bowls and top with cheese.
