Ingredients

  • 1 pkg. rice paper sheets
  • 1 pkg. thin rice noodles
  • 1 cucumber
  • 1/2 cup carrots
  • 1 cup cilantro
  • Boston leaf or green leaf lettuce
  • 8 oz. lean roasted pork
  • soy sauce
  • sriracha hot chili sauce
  • 1 lime

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. Prepare the protein: cook shrimp until pink and opaque, then peel and devein, or cook and shred chicken or roast pork into thin slices.
  3. Prepare vegetables: finely slice the cucumber, shred the carrots, and mince the cilantro.
  4. Soak rice paper sheets in warm water until soft and pliable.
  5. Lay a rice paper sheet on a flat surface, then layer lettuce, rice noodles, cucumber, carrots, herbs, and protein near the edge.
  6. Fold in the sides and roll tightly to enclose the filling, creating a spring roll.
  7. Repeat with remaining ingredients.
  8. Serve with soy sauce, sriracha, and lime wedges for dipping and flavoring.
