Ingredients

  • 1/2 cup walnuts, chopped
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup vegetable oil
  • 3/4 cup buttermilk
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C). Lightly oil an 8-inch square pan.
  2. In a small bowl, combine chopped walnuts, brown sugar, and cinnamon; set aside.
  3. In a separate bowl, mix together flour, sugar, salt, baking powder, and baking soda until well blended.
  4. In a third bowl, whisk together vegetable oil, buttermilk, egg, and vanilla.
  5. Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.
  6. Pour batter into the prepared pan and evenly sprinkle the walnut cinnamon mixture on top.
  7. Bake for approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving.
