Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine, softened
  • 3/4 cup sugar
  • 1 egg
  • 1/4 cup orange juice
  • 1 (8 oz) can crushed pineapple, undrained
  • 1 cup raisins
  • 1 cup chopped walnuts

Instructions

  1. In a small bowl, combine flour, baking powder, baking soda, and salt; set aside.
  2. In a large bowl, cream together butter and sugar; add egg and orange juice.
  3. Beat until smooth.
  4. Mix in the flour mixture and pineapple.
  5. Stir in raisins and chopped walnuts.
  6. Pour batter into a greased 9 x 5 x 3-inch loaf pan.
  7. Bake at 350°F (175°C) for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
