Ingredients

  • 2 c. sifted unbleached flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 tsp. ground cinnamon
  • 3 eggs
  • 1 c. vegetable oil
  • 1 1/2 c. brown sugar
  • 2 medium size zucchini, grated (2 c.)
  • 2 tsp. pure vanilla extract
  • 1 c. raisins
  • 1 c. chopped walnuts

Instructions

  1. Preheat oven to 350°.
  2. Sift together flour, soda, salt, baking powder and cinnamon. Combine oil, eggs, sugar, zucchini and vanilla in a large bowl.
  3. Mix well and stir in flour mixture. Stir in raisins and nuts.
  4. Pour into oiled 13 x 9 x 2-inch pan. Bake for 40 minutes or until done.
  5. Cool on wire rack.
  6. Yields 12 squares.
