Ingredients

  • 16 oz. pork sausage
  • 1/2 cup chopped bell pepper
  • 1 package (20 oz.) southwest style hash brown potatoes
  • 2 cups shredded cheese
  • 4 eggs
  • 1 cup milk
  • 1 medium tomato, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray an 8-inch square baking dish with nonstick cooking spray.
  3. Cook the pork sausage in a skillet until browned and cooked through.
  4. In a mixing bowl, combine cooked sausage, chopped bell pepper, hash brown potatoes, shredded cheese, eggs, milk, and chopped tomato.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake in the preheated oven for about 45 minutes, or until the top is golden and set.
