  • 1 bay leaf
  • 1 tsp. salt
  • 1/8 tsp. ground red pepper
  • 1 Tbsp. chopped fresh cilantro
  • tortilla chips (for topping)

Instructions

  1. Place chicken, 5 cups water, and half of the chopped onion in a large Dutch oven over medium-high heat and cook for 15 to 18 minutes or until chicken is tender.
  2. Remove chicken from the broth, reserving the broth in the Dutch oven.
  3. Cut the chicken into bite-sized pieces and set aside.
  4. In the same Dutch oven, add butter or margarine, chopped celery, remaining chopped onion, and cook until vegetables are tender.
  5. Add rinsed and drained Great Northern beans, chopped green chilies, canned chicken broth, ground cumin, bay leaf, salt, and ground red pepper to the Dutch oven.
  6. Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes to allow flavors to meld.
  7. Remove the bay leaf before serving.
  8. Serve hot, topped with tortilla chips, shredded Colby-Jack cheese, salsa, and sour cream as desired.
