White Fruit Cake - "Big Mama"

Ingredients

  • 5 eggs
  • 1 cup butter
  • 1 cup sugar
  • 2 cups sifted flour
  • 1 1/2 teaspoons baking powder
  • 1 cup lemon peel
  • 1/2 pound pecans
  • 1 small can shredded coconut
  • 1/2 pound white raisins
  • 1/2 pound candied cherries
  • 1 cup dates
  • 1 cup citron
  • 1 cup orange peel
  • 1 small can sliced pineapple
  • 1/4 cup juice

Instructions

  1. Cream the butter until smooth and fluffy.
  2. Gradually add sugar and beat well.
  3. Add eggs one at a time, beating after each addition.
  4. Mix in the juice.
  5. Sift the flour with baking powder and fold into the mixture.
  6. Dredge the chopped fruits and nuts with flour and fold into the batter.
  7. Pour the batter into a prepared baking pan.
  8. Bake in a slow oven for 2 1/2 to 3 hours, until a toothpick inserted comes out clean.
  9. Decorate the top of the cake when it is half done baking.
