White Fruit Cake - "Big Mama"

Ingredients
- 5 eggs ⓘ
- 1 cup butter ⓘ
- 1 cup sugar ⓘ
- 2 cups sifted flour ⓘ
- 1 1/2 teaspoons baking powder ⓘ
- 1 cup lemon peel
- 1/2 pound pecans ⓘ
- 1 small can shredded coconut ⓘ
- 1/2 pound white raisins
- 1/2 pound candied cherries ⓘ
- 1 cup dates ⓘ
- 1 cup citron
- 1 cup orange peel ⓘ
- 1 small can sliced pineapple ⓘ
- 1/4 cup juice ⓘ
Instructions
- Cream the butter until smooth and fluffy.
- Gradually add sugar and beat well.
- Add eggs one at a time, beating after each addition.
- Mix in the juice.
- Sift the flour with baking powder and fold into the mixture.
- Dredge the chopped fruits and nuts with flour and fold into the batter.
- Pour the batter into a prepared baking pan.
- Bake in a slow oven for 2 1/2 to 3 hours, until a toothpick inserted comes out clean.
- Decorate the top of the cake when it is half done baking.
