Ingredients
- 3 to 4 cups cooked, diced chicken ⓘ
- 2 packages or 1 1/2 bunches fresh broccoli ⓘ
- 2 cans (11 oz. each) cream of chicken soup
- 1 cup mayonnaise ⓘ
- 2 teaspoons curry powder ⓘ
- 1 tablespoon lemon juice ⓘ
- 1 small box corn muffin mix ⓘ
- 1/2 cup grated Parmesan cheese ⓘ
- 1 stick (1/2 cup) margarine ⓘ
- 1/2 cup slivered almonds (optional) ⓘ
Instructions
- Cook broccoli spears until tender-crisp.
- Drain and arrange in a greased 9 x 13-inch casserole dish.
- Layer diced cooked chicken over the broccoli.
- In a bowl, combine undiluted cream of chicken soup, mayonnaise, curry powder, and lemon juice to make the sauce.
- Spread the sauce evenly over the chicken and broccoli.
- Sprinkle dry corn muffin mix over the top.
- Sprinkle grated Parmesan cheese over the muffin mix.
- Slice margarine over the top.
- Sprinkle with slivered almonds, if using.
- Bake at 325°F for 45 to 55 minutes until golden and bubbly.
