Ingredients

  • 3 to 4 cups cooked, diced chicken
  • 2 packages or 1 1/2 bunches fresh broccoli
  • 2 cans (11 oz. each) cream of chicken soup
  • 1 cup mayonnaise
  • 2 teaspoons curry powder
  • 1 tablespoon lemon juice
  • 1 small box corn muffin mix
  • 1/2 cup grated Parmesan cheese
  • 1 stick (1/2 cup) margarine
  • 1/2 cup slivered almonds (optional)

Instructions

  1. Cook broccoli spears until tender-crisp.
  2. Drain and arrange in a greased 9 x 13-inch casserole dish.
  3. Layer diced cooked chicken over the broccoli.
  4. In a bowl, combine undiluted cream of chicken soup, mayonnaise, curry powder, and lemon juice to make the sauce.
  5. Spread the sauce evenly over the chicken and broccoli.
  6. Sprinkle dry corn muffin mix over the top.
  7. Sprinkle grated Parmesan cheese over the muffin mix.
  8. Slice margarine over the top.
  9. Sprinkle with slivered almonds, if using.
  10. Bake at 325°F for 45 to 55 minutes until golden and bubbly.
