Ingredients

  • 1/2 orange
  • 1/2 lemon
  • 2 Tbsp butter
  • 1 egg
  • 1 cup sugar
  • 1 1/2 cups blueberries
  • 1/2 cup walnuts
  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda

Instructions

  1. Heat oven to 325°F (160°C).
  2. Grate the rind of the orange and lemon. Squeeze juice, adding enough boiling water to make 3/4 cup.
  3. Add the rind and butter; stir to melt the butter.
  4. Beat the egg separately.
  5. Add sugar gradually, beating well.
  6. Add all other ingredients and the citrus juice mixture.
  7. Blend well.
  8. Spoon into a greased loaf pan.
  9. Bake for 1 hour.
  10. Remove from oven and cool.
