Ingredients

  • 1 wild duck, plucked
  • celery trimmings
  • onion trimmings
  • 8 peppercorns
  • 5 cloves garlic, peeled
  • water
  • 1 large pan cornbread
  • 3 slices white bread
  • 3 eggs, well beaten
  • 1 (10 1/2 oz.) can chicken and rice soup
  • 1 cup finely chopped celery

Instructions

  1. In a 3-quart saucepan, add duck, trimmings, peppercorns, garlic, and enough water to completely cover.
  2. Bring to a boil; cover, lower heat, and simmer for 3 hours.
  3. Remove duck. Strain broth and set aside.
  4. Preheat oven and prepare cornbread and bread slices.
  5. Mix beaten eggs with chicken and rice soup, chopped celery, and chopped onion.
  6. Crumble cornbread and bread slices into the mixture.
  7. Combine all ingredients thoroughly.
  8. Bake or cook as desired to serve.
