Ingredients

  • 1 1/2 cups wild rice
  • 3 cups chicken stock
  • 1/4 cup butter
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 3 cups sliced mushrooms
  • 1/2 teaspoon dried crushed thyme
  • 1/2 teaspoon dried crushed sage
  • 2 tablespoons finely chopped parsley

Instructions

  1. Place wild rice and chicken stock in a heavy saucepan.
  2. Bring to a boil.
  3. Reduce heat and cover tightly.
  4. Cook over low heat for about 35 minutes or until rice is tender and liquid is absorbed.
  5. Meanwhile, cook onion and celery in butter until soft.
  6. Add mushrooms, thyme, and sage.
  7. Cook and stir for 3 or 4 minutes.
  8. Add mushroom mixture and parsley to cooked rice; toss lightly.
  9. Add salt and pepper to taste.
