Ingredients

  • turkey giblets
  • 4 c. water
  • 1 (6 oz.) pkg. long grain and wild rice
  • 1 celery rib, chopped
  • 1 small onion, chopped
  • 1/2 c. butter
  • 2 1/2 c. crushed seasoned croutons
  • 1 1/2 c. chicken broth

Instructions

  1. Remove the liver from the giblets, if desired.
  2. Place giblets and water in a saucepan, cover, and simmer for 2 hours or until tender.
  3. Cook the rice according to package instructions.
  4. In a large skillet, melt butter over medium heat.
  5. Add chopped celery and onion; cook until vegetables are tender, about 5 minutes.
  6. Combine cooked rice, sautéed vegetables, crushed seasoned croutons, and chopped cooked giblets in a large bowl.
  7. Pour chicken broth over the mixture and stir to combine.
  8. Serve warm as a flavorful side dish.
