Ingredients

  • 2 cups raw wild rice
  • 1/2 cup butter
  • 1/4 cup finely chopped onion
  • 3/4 cup sauteed, sliced mushrooms
  • 1 tablespoon salt
  • 2 cups consomme
  • 2 cups water

Instructions

  1. Wash wild rice under running water, then drain.
  2. Melt butter in a 3-quart saucepan or skillet.
  3. Add chopped onion, sliced mushrooms, and salt to the butter.
  4. Cook until the onion is tender; remove from heat.
  5. Combine all ingredients in a large casserole dish, stirring to mix well.
  6. Cover and bake at 350°F for 1 1/2 hours or until rice is done, stirring occasionally during cooking.
