Ingredients

  • 1 unbaked pastry shell (9-inches)
  • 1/3 cup chopped Canadian bacon or fully cooked ham
  • 1 small onion, finely chopped
  • 1 tablespoon butter or margarine
  • 1 cup shredded Monterey Jack cheese
  • 1 cup cooked wild rice
  • 3 eggs
  • 1 1/2 cups light cream
  • 1/2 teaspoon salt
  • snipped parsley (optional)

Instructions

  1. Bake the unbaked pastry shell at 425°F for 5 minutes. Remove from the oven and set aside. Reduce oven temperature to 325°F.
  2. In a skillet, sauté Canadian bacon or ham and chopped onion in butter until the onion is tender. Spoon the mixture into the pastry shell.
  3. Sprinkle shredded Monterey Jack cheese and cooked wild rice over the sautéed mixture in the crust.
  4. In a small bowl, beat eggs, light cream, and salt together.
  5. Pour the egg mixture over the ingredients in the crust.
  6. Bake at 325°F for 35 minutes or until a knife inserted near the center comes out clean.
  7. Let stand for 10 minutes before cutting. Garnish with snipped parsley if desired.
