Ingredients

  • 6 oz. long grain wild rice
  • 1 lb. uncooked medium shrimp, peeled and deveined
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 4 oz. can mushroom stems and pieces, drained
  • 1 can cream of chicken soup (undiluted)
  • 1/2 cup seasoned stuffing mix

Instructions

  1. Prepare rice as directed on the package.
  2. In a large skillet, sauté mushrooms, green peppers, onions, and shrimp until the shrimp turn pink.
  3. Add the undiluted cream of chicken soup to the cooked rice and stir.
  4. Combine the shrimp mixture with the rice and soup mixture.
  5. Transfer the mixture to a well-greased 2-quart baking dish.
  6. Sprinkle the seasoned stuffing mix over the top.
  7. Bake uncovered at 350°F for 20 to 25 minutes or until heated through.
