Williamsburg Spinach features a savory blend of spinach, garlic, and Parmesan topped with fresh tomato slices, perfect for a flavorful appetizer or light side dish.

Ingredients

  • 12 thick tomato slices
  • 2 boxes chopped frozen spinach
  • 3/4 cup melted butter
  • 6 eggs
  • 1/2 teaspoon thyme
  • 6 green onions
  • 1 tablespoon minced garlic
  • 2 cups bread crumbs
  • 1/2 cup Parmesan cheese
  • 1 teaspoon black pepper
  • salt to taste

Instructions

  1. Cook the spinach according to package directions and let cool.
  2. Mix all ingredients together in the order given, except tomatoes.
  3. Arrange tomato slices on a greased cookie sheet and place a scoop of spinach mixture on top of each slice.
  4. Bake at 350°F for 20 minutes.
