Ingredients

  • 2 cups sugar
  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups grated carrots
  • 8 1/2 oz can crushed pineapple
  • 2 tablespoons vanilla
  • 1 cup walnuts
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 cup raisins
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves

Instructions

  1. Cream sugar and oil until well combined.
  2. Add eggs one at a time, then mix in drained crushed pineapple, vanilla, and grated carrots.
  3. Sift together flour, baking soda, baking powder, cinnamon, nutmeg, and cloves, then gradually add to the wet mixture.
  4. Stir in chopped walnuts and raisins.
  5. Pour batter into a very lightly greased 9 x 15-inch pan.
  6. Bake at 350°F (175°C) for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool slightly before frosting with Awesome Cream Cheese Frosting.
