Ingredients

  • 2 cans creamed corn
  • 2 Tbsp. butter or oleo
  • 1/4 cup flour
  • 1 Tbsp. sugar
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 small jar pimento
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. nutmeg
  • 1/2 to 1 cup milk
  • 1 cup shredded Cheddar cheese

Instructions

  1. Combine all ingredients except grated cheese; mix well.
  2. Pour the mixture into a 9 x 13-inch baking dish.
  3. Place this dish in a larger pan and add about 1 inch of water to the outer pan.
  4. Sprinkle grated Cheddar cheese on top of the mixture.
  5. Bake in a 325°F oven for about 1 hour or until a knife inserted in the center comes out clean.
