Ingredients

  • 1 1/2 lb. stew meat beef, cut into 1-inch cubes
  • 1/4 c. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3 Tbsp. vegetable oil
  • 16 oz. can tomatoes
  • 1/4 c. barbecue sauce
  • 2 large onions, chopped
  • 1 bay leaf
  • 1 stalk celery, sliced
  • 3 oz. macaroni
  • carrots, sliced

Instructions

  1. Coat beef cubes with flour, salt, and pepper.
  2. Brown meat in vegetable oil.
  3. Stir in water, tomatoes, barbecue sauce, onions, and bay leaf. Bring to a rolling boil.
  4. Reduce heat, cover, and simmer for 30 minutes until meat is tender.
  5. Add carrots, celery, and macaroni to the stew.
  6. Cover and simmer for an additional 30 to 40 minutes.
  7. Serve hot, preferably with cornbread.
