Winter Vegetable Puree

A warm, comforting winter vegetable puree blending sweet carrots, parsnips, turnips, and yams with butter and cream, perfect for cozy family dinners or festive gatherings.

Ingredients

  • 1 lb. turnips
  • 1 lb. parsnips
  • 1 lb. sweet potatoes or yams
  • 1 lb. carrots
  • 3 Tbsp. butter
  • 1/4 c. heavy cream
  • dash of nutmeg
  • salt and pepper

Instructions

  1. Peel the vegetables and chop into medium-sized pieces.
  2. Cook the vegetables until soft, then drain and mash.
  3. Combine the mashed vegetables and add melted butter, heavy cream, and a dash of nutmeg.
  4. Season with salt and pepper to taste and mix well.
  5. Mound the puree in a casserole dish.
  6. When ready to serve, microwave for 3 to 5 minutes until hot.
