  • 6 oz. pkg. strawberry Jell-O

  • 1 1/2 cups cold water
  • 2 1/2 cups crushed canned pineapple, drained

  • 1/2 cup reserved pineapple juice
  • 1/3 cup sugar
  • 1 beaten egg
  • 8 oz. pkg. cream cheese
  • 9 oz. carton Cool Whip

Instructions

  1. Combine the strawberry Jell-O in hot water and stir until dissolved.
  2. Add cold water and pour the mixture into a 9 x 13-inch dish.
  3. Refrigerate until the Jell-O is partially set.
  4. Mix crushed, drained pineapple and diced bananas into the partially set Jell-O.
  5. Return to refrigerator to set further.
  6. Cook pineapple juice, sugar, and beaten egg over medium heat for 4 to 5 minutes until thickened.
  7. Remove from heat and add cream cheese, beating until smooth.
  8. Allow the mixture to cool for about 20 minutes.
  9. Fold in the Cool Whip and pour the mixture over the set Jell-O layer.
  10. Sprinkle with nuts if desired.
  11. Refrigerate until the entire dessert is fully set, then cut into squares.
