Zesty eggs with cheddar cheese, tomato, and Worcestershire sauce offer a flavorful, quick breakfast option perfect for busy mornings or casual brunch gatherings.

Ingredients

  • 4 eggs
  • 1/4 tsp. salt
  • dash of pepper
  • 1/4 tsp. Worcestershire sauce
  • 1/3 cup tomato, peeled and chopped
  • 1/4 cup Cheddar cheese, finely shredded
  • 1 1/2 Tbsp. butter or margarine

Instructions

  1. Place all ingredients except butter into a bowl and beat with a fork until blended.
  2. Melt butter in a 1-quart glass casserole in microwave oven (about 30 seconds on High).
  3. Pour eggs mixture into the casserole.
  4. Cook uncovered 3 to 4 minutes on High or until almost set.
  5. Stir twice during cooking time.
  6. Remove from oven; stir and let stand covered a few minutes before serving.
