Ingredients

  • 1 cup sugar
  • 1/2 cup oil
  • 2 eggs
  • 1 teaspoon lemon peel
  • 1/2 teaspoon orange extract
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1 1/2 cups grated zucchini
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Beat until fluffy the sugar, oil, eggs, lemon peel, and orange extract.
  2. Mix in the remaining ingredients including the grated zucchini and nuts if using.
  3. Pour the batter into a greased loaf pan lined with wax paper on the bottom.
  4. Bake at 375°F for 55 minutes.
  5. Cool for 15 minutes before removing from the pan.
