Ingredients

  • 3 eggs
  • 1 cup cooking oil
  • 2 cups sugar
  • 2 cups zucchini, ground
  • 2 Tbsp vanilla
  • 3 cups flour
  • 1 tsp soda
  • 1/4 tsp baking powder
  • 3 tsp cinnamon
  • 1 tsp salt
  • 1 cup nuts, chopped

Instructions

  1. Add oil and sugar to a mixing bowl and beat well.
  2. Add eggs, ground zucchini, and vanilla; beat together until combined.
  3. In a separate bowl, mix flour, soda, baking powder, cinnamon, and salt.
  4. Gradually add dry ingredients to the creamed mixture, mixing well.
  5. Stir in chopped nuts.
  6. Pour the batter into two greased loaf pans.
  7. Bake at 325°F (163°C) for 1 hour or until a toothpick inserted into the center comes out clean.
