Ingredients

  • 1 lb. ground beef
  • 1/2 cup shredded zucchini
  • 1/4 cup seasoned bread crumbs
  • 1 egg
  • 2 1/2 cups sliced zucchini
  • 14 1/2 oz. can Del Monte Italian seasoned chunky tomatoes

Instructions

  1. Mix ground beef, shredded zucchini, bread crumbs, and egg. Form into eight 1/2-inch thick patties.
  2. Brown the patties on both sides in a large nonstick skillet for 3 to 4 minutes.
  3. Add sliced zucchini, seasoned tomatoes, and potatoes to the skillet.
  4. Simmer for 15 to 20 minutes, turning the patties and stirring 2 to 3 times, until vegetables are crisp and tender.
