Ingredients

  • 3 c. thinly sliced zucchini
  • 1 c. biscuit mix
  • 1/2 c. chopped onions
  • 1/2 c. grated Parmesan cheese
  • 2 Tbsp. chopped fresh parsley
  • 1 tsp. seasoned salt
  • 1/2 tsp. dried oregano
  • pepper to taste
  • 1 clove garlic, chopped
  • 1/2 c. vegetable or olive oil
  • 4 eggs, beaten

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9 x 2-inch baking pan.
  3. In a large mixing bowl, combine all ingredients and spread evenly in the prepared pan.
  4. Bake until golden, about 25 minutes.
  5. Cut into squares and serve.
