Ingredients

  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 2 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups grated zucchini
  • 2 teaspoons lemon peel
  • 3/4 cup orange juice
  • 1 cup chopped nuts

Instructions

  1. Sift the all-purpose flour, baking powder, baking soda, salt, ground nutmeg, and ground cinnamon together.
  2. Add the dry ingredients to the beaten eggs and beat well to combine.
  3. Stir in the orange juice and grated zucchini until well incorporated.
  4. Add the lemon peel and chopped nuts to the mixture and fold in gently.
  5. Pour the batter into two large or three medium-sized oiled and floured loaf pans.
  6. Bake at 350°F (175°C) for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from oven and let cool before removing from pans.
