Zucchini Dressing Casserole

Ingredients

  • 2 lb. zucchini
  • 1/4 cup onion
  • 1/2 lb. sausage
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup grated carrot
  • 1 package seasoned stuffing mix (8 oz.)
  • 1/2 cup melted margarine
  • 1 cup grated cheese (Mozzarella and Cheddar)

Instructions

  1. Cook zucchini and onion in salted water for 5 minutes; drain.
  2. Brown sausage and drain.
  3. Combine sour cream, cream of chicken soup, zucchini, and carrots in a bowl.
  4. Add melted margarine to the dressing mixture.
  5. Layer half of the dressing in the bottom of a 9 x 13-inch or 1 1/2-quart casserole dish.
  6. Pour the cooked vegetables over the dressing layer and sprinkle the sausage on top.
  7. Add the remaining dressing over the sausage layer.
  8. Bake at 350°F for 30 minutes.
  9. Sprinkle top with 1 cup grated cheese and return to the oven to melt.
