Ingredients

  • 4 cups sliced zucchini
  • 2 cups water
  • 2 eggs
  • 1 cup mayonnaise
  • 1 chopped onion
  • 1/4 cup green pepper
  • 1 cup grated Parmesan cheese
  • salt

Instructions

  1. Boil zucchini in 2 cups of water until just tender, then drain.
  2. Beat eggs in a bowl; stir in mayonnaise, chopped onion, green pepper, grated Parmesan cheese, salt, and pepper to taste.
  3. Add the cooked zucchini to the egg mixture and combine well.
  4. Pour the mixture into a 1 1/2-quart baking dish.
  5. Dot the top with 1 tablespoon of butter and sprinkle with 2 tablespoons of buttered bread crumbs.
  6. Bake at 350°F (175°C) for 30 minutes until golden brown.
