Ingredients

  • 3 eggs
  • 1 1/4 cups sugar
  • 1 cup oil
  • 1/4 cup lemon juice
  • 1 3/4 cups grated zucchini
  • 2 cups flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup chopped nuts

Instructions

  1. In a medium bowl, combine eggs, sugar, oil, lemon juice, and lemon peel.
  2. Beat until well blended.
  3. Add grated zucchini and mix well.
  4. Sift together the flour, baking powder, salt, and baking soda.
  5. Stir the dry ingredients into the zucchini mixture.
  6. Fold in chopped nuts.
  7. Pour the batter into a greased 9 x 13-inch pan.
  8. Bake at 350°F for 45 minutes or until the cake springs back when touched.
  9. Cool in the pan.
  10. Frost with glaze, if desired.
