Ingredients

  • 2 Tbsp. vegetable oil
  • 3 medium zucchini
  • 1 sliced onion
  • 1 lb. ground beef
  • 1 (8 oz.) can tomato sauce
  • 1 clove minced garlic
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 egg
  • 1 c. cottage cheese
  • 1/4 c. Parmesan cheese, grated

Instructions

  1. In vegetable oil, cook zucchini and sliced onion until tender. Place in bottom of a 2-quart casserole dish.
  2. In the same skillet, brown the ground beef and drain.
  3. Add tomato sauce, minced garlic, salt, and cinnamon; mix well.
  4. Pour meat mixture over the zucchini and onion in the casserole dish.
  5. In a bowl, beat the egg slightly and combine with cottage cheese.
  6. Spread the cheese mixture over the meat layer.
  7. Sprinkle grated Parmesan cheese on top.
  8. Bake at 375°F (190°C) for about 20-25 minutes until golden and bubbly.
